After a long Thursday that felt like a Friday, I was ready to crash at home and relax. Luckily, the Husband had my favorite easy meal ready! We had Easy Italian Chicken Casserole. Basically, it is a heat and eat kind of meal!
We use canned vegetables in this recipe, it’s the way that the Husband’s mom made it. I am sure you can use fresh, it would just change your cook time.
So here goes!
Place 2 tbs of butter in microwave to melt. Mix in a packet Goods Italian seasoning and 2 tbs of water.
Empty a can of corn, a can of green beans, and a can of whole new potatoes into a 9×13 casserole dish. Also place one raw, cleaned, chicken breast per person in the dish. Evenly pour the dressing over the dish. Cover with foil and bake for 45 minutes at 350 degrees. Plate and serve! Super easy!
We also served with wine!
After we settled in for the night and checked to make sure the oven was off, we noticed the house wasn’t cooling down. Cue gameshow loser music. Our AC fan was running but not the unit outside. The Husband is working on it today but we have no idea what was wrong. Maggie is definitely suffering the worst out of the three of us. I think she slept on the kitchen floor. I slept without blankets and a fan! Hopefully it is an easy fix, fingers crossed!
