Monday Meal Planning

Happy Monday!  I really wish that I had an extra day to finish everything that ended up on my to do list over the weekend.  We got most of the cooking done but anything that fell outside of the kitchen most likely did not happen.  We will be hopefully getting those things done over the week and early Saturday!

So what did we get done…

First, we brewed batch 4 of beer this weekend.  It’s a English Style Brown and we added some extra chocolaty grains as well as some of the spices you would find in a pumpkin pie recipe.

We tested the gravity on this beer and we are going to be much more calculated with this beer, writing everything down and really trying to document the process.  I also picked up a brewing basics book this weekend.  Ready to learn what it takes to really brew our own quality beer with our own recipes! It’s John Palmer’s How to Brew and I am ready to get started!!

We also did a lot of cooking.  The Husband got the chicken going early, I made a quinoa salad, I roasted garlic, and pickled beets.  We also got all of our snacks packaged and ready to go.  I also sorted through the kitchen and got all of our ingredients in jars and organized.  Now that we can see what we have, it will make it easier to cook (or bake, we have two full jars of oats!).

I find that if you get your menu and your kitchen together one day a week, it makes it easier not too cheat when it comes to your menu.  If it’s all there, why go out?

This week’s menu looks something like this:

Monday Steak and Twice Baked Potatoes

Tuesday Enchiladas

Wednesday Out with Friends (It’s a paired dinner at Martini’s)

Thursday Eggplant Casserole

Friday Shrimp and Salad

Half way there!

Happy Wednesday everybody!  Yesterday the Husband and I managed some prep cooking for the rest of the week.  Happily, I only had to heat up my slice of fritatta/quiche this morning!  It had peppers, onions, bacon, and cheese!  So good.  We make a lot of it and then we can heat and go the rest of the week!

Yesterday, I managed to get my PenPal box in the mail!  Hopefully she likes it!

Also forgot to post this great sandwich from this weekend!  We have a hunk of Mozz in our fridge and it belongs on everything!  We watched Iron Chef last night and they made a Nutella, Bacon, and Mozz sandwich!!  I told my husband he was lucky that we used the last of the bacon in the quiche or I would have been making sandwiches at 9:00 last night!

We’ve made it half way through the week and I still haven’t managed to get any exercise in!  We are still shaking what ales us.  I think tonight I will at least take Maggie for a walk.

A new kind of lunch! *UPDATED*

So a while back I won a giveaway from Elise for the Earthbound Farms cookbook and some coupons for their products.  As soon as the coupons arrived, I went on a hunt for the PowerMeals.  Sadly in our area, I was having a tough time locating them.  After some emailing with their rep and some calls to local stores, I was only able to find the boxed salad.  EarthBound Farms was kind enough to send me some samples for the Husband and I to try.

I was so excited at the thought of having a box with everything I need for lunch already put together in a grab and go set up.  They have three flavors; Blueberry Quinoa Protein Balance, Tomatillo Black Bean Protein Energy, and Cranberry Wheat Protein Boost, there was plenty to choose from.  While I have enjoyed trying the flavors I am still playing with adding some extra veggies like cucumbers and tomatoes.  I love the items included but I am still trying to get the right balance. 

I really like the idea of these salads and I think that they will be a great base as we get some other great flavors from the Farmer’s Market to add.  Definitely full of nutrition and keeps me full all afternoon!

UPDATE:  Just tried the Tomatillo Black Bean and it blew my socks off!  All this salad needs is a side of Avocado!  Thank you Earth Bound!

Almost the weekend!

Happy Thursday!  When I got out of bed this morning I was trying to figure out how we were already nearing the end of the week. I was able to successfully help get the Husband out the door this morning but quickly realized that we had no milk, eggs, or lunch items.  I got myself together and headed out with plans to stop by Whole Foods.  I usually don’t stop there but they are the only store that has a fully stocked lunch selection before work.  I grabbed a sandwich and juice for lunch and a Green Smoothie for breakfast.  Surprisingly kept me full!

This is definitely how this week has felt!  Who’s ready for the weekend?
